Zucchini and carrot fritters

This Zucchini carrot fritter and super easy to make, they are also the best way to add more fresh vegetables and fibre into your diet and they are the best addition to any meal.
This will make 5 small serves:
1 grated carrot
1/2 striped zucchini
1 tsp almond meal
Pinch fennel seed
salt and pepper
Mix all the ingredients in a bowl until they are well incorporated.
In a saucepan, heat up 1 teaspoon of coconut oil.
With a spoon put a little of the mixture in the pan forming the fritters.
Cook for 2 min on each side.
Serve with guacamole and cashew cheese.
