GRILL – THE TASTIEST WAY TO INCREASE YOUR FRUIT AND VEGETABLES CONSUMPTION.
Grilling fruits and vegetables limits nutrient loss, brings out natural sweetness and locks in flavour.
Fruits are naturally sweet and become sweeter when grilling.
Fresh seasonings such as grated ginger root or nutmeg make a good rub for the exterior of the fruit. Cinnamon, cloves, ginger and nutmeg all enhance the sweetness of your grilled fruit. Alternately, use cayenne pepper for a bit of spice or lime juice for a fresh kick.
Serve grilled fruit as a healthful dessert, as breakfast compliment or side dish.
SPICED GRILLED PINEAPPLE
1 Tbs coconut oil or olive oil
1 Tbs ground cinnamon
1 Tbs ground nutmeg
1 Tbs fresh lime juice
2 slices of pineapple
1 grated carrot
Heat up a pan or grill. In a bowl mix the lime juice, cinnamon, nutmeg and oil.
Brush the pineapple and carrot with the mix and grill for about 5 min, turning frequently until fruits starts to brown.
Serve with coconut yogurt and granola for healthy breakfast or desert option.
