Quinoa is a great source of plant based protein and fibra!
Quinoa has been used for generations in the South America but only in last couple of year has become very popular as an alternative source of natural protein and fibra, specially for people that is looking to move away from processed and inflammatory wheat base products.
It is such a versatile ingredient that can be use on dessert, salads and recipes like this one!
QUINOA AND CHICKPEA BURGER PATTIES
1 cup Sprouted chickpeas
1 cup cooked quinoa
1/2 Cup Parsley
1/4 tsp Cumin
1/4 tsp Turmeric
1/2 Cup coconut oil or olive oil plus 1 tbsp for cooking
salt and pepper
What to do:
Place all the ingredients in a food processor and pulse a few times till finely chopped. Spoon the mixture evenly into a fry pan and cook for 5 min on each side or until cooked through.
You can make a big batch, freeze them and use for other meals.
Serve with fresh greens, avocado and homemade cashew lime cheese. Delicioso! 🙂
