This is one of my favourite recipes. Latin flavours at its best!
Plantain is an ingredient traditionally use in Latin American cuisine. Its versatility makes it a key ingredient for cooking either salty or sweet dishes and the best it is gluten free!
PLANTAIN PIZZA BASE (GF)
2 Plantains peeled
1 Garlic head
2 Tb olive oil or coconut oil
A pinch of Himalayan Salt
Why is good for you?
Plantain is a super food that not many people knows about. It looks like a banana but they are different. Plantains are bigger and have heaps of nutrients, mineral and vitamins as well as fibre. Is low in carbs, and a great source of potassium.
What do you do?
Mix all ingredients in a vitamix. The mix will look as a soft paste. Cover a baking tray with baking paper and expand the mix over creating a pizza base shape.
Heat up the oven at 180 degrees, bake the pizza base for about 20 min till it looks golden and crispy.

Take heaped tablespoons of the mix, add to the pan and grill for 2 -3 min until golden brown on each side.
You can use any toppings for your pizza, my favourites, brocomole and cashew lime cream cheese! Delicioso! 🙂
