HOMEMADE PAD THAI
This plant based recipe is my take on a traditional Thai dish. The easiest and delicious way to add more veggies into your cooking!
What do you need?
4-5 Tbsp. extra virgin coconut oil
3 cloves garlic, finely chopped
½ red chilli, finely chopped (without seeds)
1 Tbsp. Grated Ginger
1 Tbsp. Coconut Aminos
1/2 fresh lime juice
1 Tbsp. Tamari sauce
2 spring onions, finely chopped
¼ broccoli cut into julienne strips
2 medium carrots, cut into thin julienne strips
2 Tbsp. chopped cashews
1 Packages of brown rice noodles (cooked per package instructions)
Optional: 1½ lb chicken meat, cut into small chunks or prawns
What do you do:
Heat a wok over medium-high heat. Add oil and garlic, chilli, cook for about 1 minute.
If you are using meat: Add chicken and cook 2-3 minutes, stirring frequently, until lightly browned.
Add broccoli and julienned carrot. Cook, stirring frequently, until soft but still firm, about 3-4 minutes.
Add Tamari sauce, coconut aminos, and lime juice. Cook at a rapid simmer until is cooked through, about 5-8 minutes.
Toss and mix in the cooked noodles , garnish with green onion . Enjoy! 🙂
