CREAMY AVOCADO PESTO WUTH ZUCCHINI NODDLES
1 bunch of basil
¼ cup raw cashews
½ cup olive oil or more to mix
salt and pepper
What do you do?
Mix all the ingredients for the pesto in a vita-mix and blend till smooth like a paste. Use a mandolin to cut the zucchini into long ribbons.
Mix pesto with zucchini pasta and serve.
short on time – grate the zucchini in a food processor instead of cutting by hand.
different veg – carrots, cucumber, are all good.
carnivore – serve as a side to pan fried or grilled chicken, fish, pork sausages. Or crumble over crispy bacon.
more substantial – serve some grains such as lentils or cannellini.
more spice – add some kefir lime leaves for a lemonier fresh flavour. Other leafy herbs work well. Parsley, mint and coriander leaf (cilantro) are all great. wintery – make a winter pesto with flat leaf parsley instead of basil.
nuts – Almonds, brazil nuts, walnuts, pecans, peanuts. I prefer unroasted so the nut flavour doesn’t dominate, but feel free to experiment with roasted nuts too.
