Chilli non carne is a quick and practical recipe for meatless days, that is still full of protein, fibra and essential mineral.
1 Cup of sprouted red beans or can red beans
1 sweet potato cut into cubes
1 Tbsp paprika
1 Tbsp Cumin
1 Tbsp coriander
1/2 Cup tomato paste
1 Garlic clove
1 Tsp Olive oil
Salt and pepper
Heat the oil in a pan, grill the garlic and spices, add the sweet potato cubes and tomato pure plus one cup of water. When the potatoes are cook, stir in the beans and let simmer for a couple of minutes.
This recipe can be serve with guacamole, sour cream or cashew cheese and corn chips 🙂
